Chicken in Sun-Dried Tomato Cream Sauce

A quick, flavour-packed dinner you’ll love — and your guests will be impressed!

Ingredients:

  • 500g chicken breast fillets
  • A little oil (for grilling – optional)
  • ~15 sun-dried tomatoes (in oil or dried, rehydrated)
  • 200ml water
  • 500ml cooking cream (use Avonmore or Tesco double cream)
  • 100g grated cheese (cheddar or Edam-style works well)
  • Salt, pepper, and seasoning (e.g. garlic powder, mixed herbs) to taste

Instructions:

Serve hot with rice, pasta, or mashed potatoes.

Season the chicken fillets with salt, pepper, and your preferred herbs.

Grill or pan-sear the chicken on a bit of oil until golden and cooked through.

While the chicken cooks, blend the sun-dried tomatoes with 200ml water to create a smooth sauce.

In a bowl, mix the cream and blended tomato sauce together.

When the chicken is ready, pour the sauce over the chicken in the pan.

Simmer for about 10 minutes, allowing the sauce to thicken slightly and the flavours to meld.

Grate cheese over the top, stir gently until it melts, and taste for seasoning.
